When the oil reaches 350°, place wild turkey in frying basket and very slowly lower it into the pot. It's important to keep oil temperature between 325°-350°. Cooking times is about 3 ½ minutes per pound of turkey. Allow turkey to rest for 15 minutes after removing from fryer.
